Auvergne is a region on the rise for fine Pinot Noir in Central
France. Cultivated since the days of the Romans in this
volcanic region, the vineyards cover the steep hills up
to a height of 450 meters. This unusual situation,
combined with mostly basalt, clay and
limestone soils, produces wines
with freshness and red fruit character.
We carefully select our grapes which are picked at perfect
ripeness. After picking, the Pinot noir undergoes a cold
premaceration (or cold soak), and a 15 days
fermentation with everyday pigeage
to keep the wine fresh. Aged in
stainless-steel tanks.
